BAKED SALMON PARMESAN CRUST WITH PEA PESTO SAUCE RECIPE

Assalamualaikum and hi hi hi everything... hopefully, each and everyone of you who is celebrating the Chinese New Year today have had a wonderful celebration... Gong Xi Fa Cai... Xin Nian Kuai Le... along the day, delicious dishes will surely be prepared in order to serve the family and as to celebrate the festive season happily... although no massive gathering is allowed to be performed, based on the CNY-eve that we had experienced yesterday night, the festival is still being celebrated with excitement although with full of simplicity yet meaningful... we could see our neighbours preparing the foods happily together with their close family members... how wonderful the scene was...

As a working-seller-blogger-ghostwriter-mother, I have always had some tricky occasions while dealing with my children in view of the vegetable-related foodie... tell me about it... there are lots and lots of drama that need to be entertained and watched whenever the vege-episode arised... when they are smaller, I even used to chase them around our tiny home just to ensure that my children finish up their vegetable portion... for the past few years, I kept experimenting and trying new recipes to ensure that my children still obtained all of the nutrients that their body would need... yesterday, I saw this recipe at one of the social media that I was scrolling of and I think that it would be great if I share the recipe with all of you as well... sharing is caring isn't it?...

Here you go... baked salmon parmesan crust with pea pesto sauce recipe... first of all, instead of using breadcrumbs for baked salmon crust, we can replace it with blended rolled oats in order to obtain the crumbly texture... further to this, adding melted unsalted butter also helps to hold the crust ingredients together and it adds flavour to the foodie later on...

Ingredients for baked salmon
Salmon fillet
2 cloves garlic
Rolled oats
Parmesan cheese
Melted unsalted butter
Mixed herbs

Ingredients for pea pesto
Baby peas
Parmesan cheese
Basil leaves
Extra virgin olive oil



Step 1
- In a small bowl, mix the smashed garlic, blended rolled oats, parmesan cheese and mixed herbs.
- Drizzle the melted unsalted butter into the mixture and mix well.
- Sprinkle the mixture over the top of the salmon fillet.
- Bake for 10-15 mins @ 180 degrees.

Step 2
- Blend baby peas along with parmesan cheese, basil leaves and a drop of extra virgin olive oil.
- Blitz until smooth.

Step 3
- Cook the pasta.
- Serve with pea pesto sauce and baked salmon.

You can freeze the extra pesto sauce for dips or pizza toppings—makes it a perfect meal in a hurry!

Pesto can also be a surprising favourite for fussy eaters and and mixing up the ingredients is a great way to promote acceptance and enjoyment of a wide variety of nutritious foods.

So I have tried to prepare this recipe and guess what... I utilized these pasta because it is made from VEGETABLES!!! Thus, I need not to worry on my children's vegetable intake anymore... hehehehe...

  9. Saya pernah buat pesto tapi biasa guna spinach, kale atau basil je. Dah la takde blender, so terpaksa la dengan gigihnya cincang guna pisau. Haha. Nanti nak try guna peas pulak.
