SIMPLE YET DELICIOUS CHICKEN CASSEROLE RECIPE

Assalamualaikum and hi hi hi everything... since my family sort of moved-in with me at my current accommodation within the southern part of peninsular Malaysia starting end-October 2020 due to the PKPB, we have been buying our foods due to no cooking utensils or even any stove... yes, the accommodation that I stayed in prohibited us to cook using any stove... thus, our day to day cuisine is simply the same old menu and it keep repeating itself... nevertheless, we are grateful because we still have the opportunity to eat happily with our loved ones, still have the roof for us to live in, still have good people around us...

While flipping through the calendar, I realized that Chinese New Year is just around the corner! My oh my... have you make the preparation guys?... I could still remember, we were also celebrating Hari Raya Aidilfitri 2020 in an SOP mode... nevertheless, it is still remarkable as the most important thing is that we celebrated it with our loved ones, even if we are not physically at the same place but our hearts are close with each other... further to this, I wanna share with all of you on this HOT SALES of up to 80% OFF!!! Isn't it super wow!!!

So, here is the BONUS... I am going to share with all of you a recipe which could be done by utilizing the casserole... here you go...

CHICKEN CASSEROLE

Ingredients:
1/4 teaspoon salt or to taste
1/2 teaspoon sugar
3 dashes ground black pepper
1 tablespoon Ranch dressing
1/4 cup heavy whipping cream
2 medium-sized potatoes, peeled and cut into pieces
8 oz (226 g) boneless, skinless chicken breast, cut into cubes
2 slices of chicken strips (I changed slightly this ingredient), cut into pieces
4 tablespoons unsalted butter, cut into small pieces
1 cup shredded cheddar cheese
1 stalk scallion, green part only, cut into small rounds

Instructions:
1) Heat oven to 350 degrees F. Lightly grease a 9" x 9" baking pan with some oil or butter.
2) Add the salt, sugar, pepper and Ranch dressing to the heavy whipping cream.
3) Lightly stir to combine well.
4) Spread the potatoes, follow by the chicken, in one single layer.
5) Sprinkle the bacon, butter, and then top with half of the cheddar cheese and the scallions.
6) Pour the heavy cream over top of casserole.
7) Cover with aluminum foil and bake for 1 hour.
8) Uncover the pan and bake for another 30 minutes.
9) In the last 10 minutes, sprinkle with the remaining cheddar cheese and bake until the cheese is slightly crusty.
10) Remove from the oven and serve immediately.
